This is easily my favorite cake. I love the hint of chocolate masked by the red coloring. It's so yummy and classic.
Red Velvet Cupcakes Recipe
Ingredients:
- 2 1/2 cups cake flour (or all purpose flour)
- 1 1/2 cups granulated white sugar
- 1 teaspoon baking powder
- 1 teaspoon salt
- 2 teaspoons cocoa powder
- 1 cup vegetable oil
- 1 cup buttermilk
- 2 large eggs
- 2 tablespoons red food coloring (if you're using the gel coloring, about 1/2 tsp works)
- 1 teaspoon white distilled vinegar
- 3 teaspoons vanilla extract
Directions:
- Preheat oven to 350 degrees F
- Line two 12 cup cupcake pans
- Sift together dry ingredients in a medium bowl
- With a hand mixer or electric mixer blend together eggs, buttermilk, vegetable oil, vanilla, vinegar, and food coloring (if you're using gel coloring, mix it in after the dry ingredients are added)
- Add sifted dry ingredients into the wet mixture and mix until thoroughly combined
- Divide mixture among cupcake tins, filling each cup about 2/3
- Bake for 20-22 minutes
